Would you be content with GTA V being the last GTA game made, but updated constantly?

Not really, I'd like a new GTA from time to time and I think the VI is already being made. They make so much money and the game is so popular that it would be a mistake to not make more.

Of course not! The story has to change, the characters have to change, the landscape and map, even the location have to change so we can enjoy it all over again! If we just use the same map, with the same cars, same colors, it would be incredibly boring eventually. New is always better, so I am eagerly awaiting for GTA 6, even though it might even be a decade until the new one shows up. But I wouldn't mind, because I know it will be very good. And of course, it would be worth the wait.
